Bloody Caesar

Ingredients for the seasoning : 

  • One 130g pack of Pork Shop's Lawrence sausage, cubed

Ingredients for the cocktail :

  • 3-4 ice cubes
  • 1 ounces of vodka (or to taste)
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Tabasco Chipotle
  • Ice cold Clamato
  • 1 slice of lime
  • Freshly ground pepper
  • Celery branch

Preparing the seasoning

In a frying pan over medium heat, brown the cubed sausage during 5 to 6 minutes, until crispy. Strain to remove the fat and put the cubes on a paper towel in order to remove as much remaining fat as possible. Let cool completely and finely grind the cubes in a food processor. Pour the powder in a bowl.

Want to sharpen your mix? Add these ingredients before grinding the cubes:

  • 1/2 tablespoon of dill seeds
  • 1/2 tablespoon of coriander seeds
  • 1/4 tablespoon of chili powder
  • 1/2 tablespoon of granulated garlic
  • 1/2 tablespoon of pepper
  • 1/4 tablespoon of crushed bay leaves
  • 1/2 tablespoon of onion flakes

Preparing the cocktail

Wet the rim of a tall glass and rub it into the sausage powder mix until it forms a delicious crust.

Put some ice cubes in the glass and add vodka, Worcester sauce and Tabasco Chipotle. Fill with Clamato, squeeze a slice of lime and throw it in the glass. Add pepper to taste and stir with the celery branch. Serve immediately.
